Ratafia Ghislain Payer
For a long
time, it was mainly intended for local consumption: for passing tourists, grape
harvesters and the winemaker himself.
Ratafia de
Champagne is a true gem, difficult to find due to its rarity.
The nose
reveals candied fruits with spicy and toasted notes. On the palate, aromas of
red fruits, Morello cherries and lychees.
Ideal with
dessert, but also as an aperitif with a goat’s cheese macaron and fig jam.

: how is Ratafia made?
It is a
blend of grape must and Fine de la Marne.
Les Chenaux
is the name of the vineyard parcel used for our Ratafia. The vines there are
more than 50 years old. The yield is lower, but the grapes are more
concentrated in flavour. The finest bunches are selected to produce a
high-quality juice – the must.
As for the
Fine, it is produced in the village stills, where we distil the wine to obtain
alcohol – an artisanal process carried out in keeping with ancestral
traditions.
The Ratafia
is then aged in oak barrels.
