OUR HOUSE


Our vineyards are nestled in the heart of the Montagne de Reims. Our terroir is located exclusively in Chamery, a Premier Cru village. Our estate covers 4 hectares, divided among 6 individual vineyard sites.

Appellation: CHAMPAGNE

Terroir: Clay, sand and clay-sandy soils

Average age of the vines: 38 years

Our vineyards are planted with 40% Chardonnay, 35% Pinot Noir and 15% Meunier. The remaining 10% is divided between Pinot Gris (also known as Fromenteau), Petit Meslier and Arbanne – traditional, lesser-known Champagne grape varieties.

Our grapes are pressed using a traditional 4,000 kg Champagne press.

Bottling and ageing take place entirely at the estate.

Our family identity is built around one fundamental principle: preserving our heritage for the long term and passing it on from one generation to the next. Today, Benoist represents the fifth generation and Henry the sixth generation to preserve these vineyards. We market our Champagnes under the Perseval-Farge name, inherited from our ancestors.

Wine is born in the vineyard. Throughout the year, we therefore care for our vines with the greatest attention, allowing them to express their full potential. Our organic farming certification now clearly reflects our commitment to practices that are particularly respectful of the environment.



OUR STRENGTHS


The quality of our organically certified grapes, grown across a mosaic of six individual vineyard sites.

The vinification or ageing in wood of all or part of our wines before bottling.

Blends containing a minimum of 40% reserve wines, followed by several years of ageing on the lees – and considerably longer for our vintage Champagnes.

Through our Champagnes, we want to share moments of emotion, pleasure and celebration – wines that convey a story, an identity and a set of values.

Unique Champagnes with a natural and seductive character, perfectly suited to the most memorable moments of sharing.

Our ambition is to create Champagnes without artifice, arrogance or extravagance. Champagnes with genuine energy and remarkable freshness – rich, vinous, precise and balanced… created with passion and full of character.

OUR GRAPES


Pinot Noir is well represented throughout our estate. It may be vinified on its own or blended with Meunier and/or Chardonnay. Young wines are recognisable by their fruity aromas of small red and black berries, while more mature cuvées can develop notes of Morello cherries in eau-de-vie.

Meunier represents a smaller proportion of our vineyards. It is always blended with the other Champagne varieties, Pinot Noir and/or Chardonnay. These moderately acidic wines evolve relatively quickly and display an aromatic palette that includes raspberry and Reinette apple.

Chardonnay plays an important role in our vineyards. Whether used on its own or in a blend, it offers us as winemakers a remarkable range of possibilities. Its aromatic richness, diverse structures on the palate and varying levels of roundness and acidity give this grape its nobility and complexity. It develops aromas of toasted bread, brioche, hazelnut and citrus fruit.

Alongside these three dominant Champagne varieties, we wanted to bring an additional soul to our wines through other, almost “forgotten” grapes: Arbanne, Petit Meslier and Pinot Gris. These rare and sometimes temperamental varieties offer an incomparable wealth of sensory characteristics. 

Arbanne can reveal notes of mandarin, bergamot and juniper; Petit Meslier offers aromas of lime and violet; while Pinot Gris can express dried fruit and smoky notes.

Paradoxically, these forgotten grape varieties can bring an innovative dimension to our exceptional cuvées.



DOSAGE

(Or sugar content)


The dosage, or liqueur d’expédition, is a blend of cane sugar and reserve wines specifically adapted to each cuvée. The amount of sugar added determines whether the Champagne is classified as Extra Brut, Brut Nature, Brut and so on.

Some wines receive no additional dosage at all. In this case, the small amount of wine lost during disgorgement is replaced with the same wine already contained in the bottle.

Among the Perseval-Farge cuvées, you will find both Brut Nature, containing less than 3 g/l of sugar, and Brut, containing less than 12 g/l.
